The present invention relates to a manufacturing method of a seasoning composition for kimchi containing brown wice and Curcuma longa, and a kimch manufactured by using same. When the kimch is manufactured by using the seasoning composition according to the present invention, functionality is added to the kimch by adding Curcuma longa having useful effects to seasoning of kimch; glossiness and texture of the kimch can be increased and bitter taste of Curcuma longa can be reduced by using starch porridge using germinated brown rice and plain brown rice; and the functional kimch containing Curcuma longa, which has increased texture, increased palatability, increased storability, and increased nutrients, can be manufactured. Moreover, demand for Curcuma longa, hard to be used for processed food, is increased. Therefore, income of farmers cultivating Curcuma longa is expected to be increased; a health promotional effect is expected. |
