PROCESS FOR MANUFACTURING WHOLE RICE FLOUR AND WHOLE RICE FLOUR OBTAINED BY SAID PROCESS

A process for manufacturing a whole rice flour having a higher added value through use of a brown rice obtained from a GABA-enriched rough rice, comprising: passing heated and humidified air through a rough rice to enhance the GABA content of the rough rice; drying the resulting rough rice to a prescribed water content; husking the dried rough rice into a brown rice; subjecting the brown rice to grain classification to separate immature rice grains; and milling the immature rice grains into a whole rice flour. Thus, a high added value can be imparted to immature rice grains which have hitherto been obliged to be sold at a low price.
