<P>PROBLEM TO BE SOLVED: To provide a beverage (specifically, a packaged beverage) which contains a large amount of Cyclo (Pro-Phe), is improved in flavor, and solves the following problem: sterilization, particularly retort sterilization, of a beverage increased in Cyclo (Pro-Phe), results in reinforcing bitter taste while being coupled with heated smell and impure flavor due to heating to make the after taste get worse, while it is known that Cyclo (Pro-Leu) or Cyclo (Pro-Phe) in cyclic dipeptide falling in a coffee beverage or a cocoa beverage functions as a bitter taste component. <P>SOLUTION: The beverage contains Cyclo (Pro-Phe) (A) and chlorogenic acid (B). The concentration of the Cyclo (Pro-Phe) is ≥30 μg based on 100 g of the beverage, and the ratio (weight ratio) of the Cyclo (Pro-Phe) to the chlorogenic acid ((A)/(B)) is ≤(1.2×10<SP>-3</SP>). <P>COPYRIGHT: (C)2010,JPO&INPIT |
