The present invention relates to a kimchi containing anti-oxidant substances and a manufacturing method thereof, and specifically, to a kimchi containing anti-oxidant substances extracted from sporophyll of sea mustard which has been firstly filed and registered by the applicant of the present invention (Korean registered patent publication no. 10-0740208), thereby adding an anti-oxidation activity to kimchi to prevent various lifestyle-related diseases such as cancer prevention, cholesterol drop, atherosclerosis alleviation, etc., as well as having an excellent taste, flavor and crunchy texture, and not getting sour easily; and to a manufacturing method thereof. |
