Pasties are made by shaping cases of a mash of pastry dough-like consistency from cooked potatoes together with potato powder or from potato powder without mashed cooked potatoes, the potato powder being either cooked or uncooked, filling the cases, and cooking by deep frying in cooking fat or oil. Examples of mixes suitable for the casings are: (a) Steam cooked natural mashed potato 85 per cent, and dehydrated cooked mashed potato powder 15 per cent. (d) Reconstituted uncooked potato powder 10.4 per cent, dehydrated cooked mashed potato powder 20.8 per cent, raw mashed potato 3.5 per cent, water 65.3 per cent. (h) Dehydrated cooked mashed potato powder 17.0 per cent, cooked reconstituted uncooked potato powder 6.8 per cent, mashed uncooked natural potatoes 4.7 per cent, and water 71.5 per cent. |
