PURPOSE: A manufacturing method of kimchi inside material which contains multi-vitamin and kimchi manufactured by the same are provided to enhance nutrients by adding multi-vitamin and to improve color, flavor, taste, and texture. CONSTITUTION: A manufacturing method of kimchi inside material which contains multi-vitamin comprises the following steps: manufacturing salted cabbage; adding 15-25 parts by weight of saline and 0.15-0.20 part by weight of vitamin premix based on 100 parts by weight of salted anchovies and salted shrimps mixture; aging the mixture at 4 to 8 deg. Celsius for 6 to 8 days, aging at 15 to 20 deg. Celsius for 6 to 8 days and aging at -4 to -1 deg. Celsius for 6 to 8 days; aging by adding fermented seafood to Kimchi spice; manufacturing the kimchi inside material by mixing 45-60 parts by weight of radish, 10-20 parts by weight of garlic, 10-16 parts by weight of ginger, 15-20 parts by weight of onion, 15-20 parts by weight of Korean leek, 15-20 parts by weight of dilapidation and 15-20 parts by weight of glutinous rice starch based on 100 parts by weight of kimchi spice; and adding the kimchi inside material to Chinese cabbage to manufacture Kimchi and aging the same. A vitamin premix comprises 100-851 MgRE/g of vitamin A, 1.00-4.01 mg a-TE/g of vitamin E, 0.10-5.16 Mg/g of Vitamin D, 0.10-1.73 mg/g of vitamin B1, 0.10-1.33 mg/g of vitamin B2, 1.00-16.69 mgNE/g of vitamin B3, and 0.10-2.31 mg/g of vitamin B6. |
