The present invention relates to a manufacturing method of a functional coffee drink composition including fermented coffee products (coffee beans or by-products) and an extract thereof, and, more specifically, to a manufacturing method of a functional coffee drink composition including fermented liquid and fermented coffee residual extract, and a functional coffee drink composition manufactured thereby, wherein the fermented liquid is obtained by fermenting unprocessed coffee beans or coffee by-products, which are mostly discarded without being consumed, by using lactobacillus, and the fermented coffee residual extract is obtained by extracting the dried fermented coffee residue besides the fermented liquid, with ethanol. As the manufacturing method of the present invention is able to enhance elution of chlorogenic acid in the coffee through a simple process, the composition of the present invention manufactured through the method contains a large quantity of chlorogenic acid having a lipoperoxide production suppressing effect, cholesterol biosynthesis inhibition effect, an anti-oxidation activity, an anti-inflammatory effect and an anti-cancer effect, enabling the composition to be used as a functional coffee drink composition. Further, the manufacturing method of the present invention utilizes coffee beans, of which the unit price is cheap, or discarded coffee by-products to create novel health materials having functionalities, to provide an eco-friendly effect through the recycling of waste.
