PROBLEM TO BE SOLVED: To provide a process for producing a tea extract which contains non-polymeric catechins having enhanced solubility in high-concentration organic solvents.SOLUTION: This process for producing a tea extract includes a step in which a crude tea extract having a non-polymeric catechin content of 5-40 mass% relative to the solid components is mixed with a water-soluble metal salt and the mixture is brought into contact with an aqueous solution of an organic solvent.
