摘要 <p>The present invention relates to makgeolli using red ginseng starch, which contains the flavor and functional ingredients of red ginseng and improves the sweetness so that the content of an artificial sweetener added for improving the taste of the makgeolli can be reduced, and a method for manufacturing the makgeolli. The method for manufacturing the makgeolli using the red ginseng starch in the present invention comprises: preparation of crude liquor of the red ginseng starch by mixing the red ginseng starch, yeast, and malt with koji, and then adding purified water; preparation of firstly brewed liquor of the red ginseng starch by mixing the koji, the red ginseng starch, and the yeast with the crude liquor of the red ginseng starch and adding the purified water; preparation of secondarily brewed liquor of the red ginseng starch by mixing puffed rice, the koji, and the yeast with the firstly brewed liquor of the red ginseng starch and adding the purified water; filtration of the secondarily brewed liquor of the red ginseng starch with a strainer; and addition of the purified water, aspartame, and glucose. The makgeolli using the red ginseng starch manufactured by the method contains the flavor and functional ingredients of the red ginseng and improves the sweetness.
