The present invention relates to a grilled squid skewer, whose main ingredient is squid, which has an improved digestion-absorption rate of a nutritional ingredient in the squid, and a method for preparing the same. The grilled squid skewer has a long storage period by inhibiting a growth of bacteria, and when eating the grilled squid skewer, the digestion-absorption rate is increased by decomposing a high molecular weight squid protein in a low molecular weight peptide because the squid is boiled and matured at low-temperature and mixed with a seasoning containing a lactobacillus. Moreover, the method for preparing a grilled squid skewer provides an improved texture through boiling, a selected seasoning, and a process of maturing at low temperature and thus the grilled squid skewer having an improved appearance, gustatory and olfactory characteristics can be prepared. |
