摘要 The present invention relates to a method for producing young hairtail bibimbap. To solve the problem, the method of the present invention comprises: a young hairtail sushi preparing step of preparing young hairtail sushi by sequentially preparing hairtail, removing the skin and entrails of the hairtail, washing the same, and cutting the same with bone to a width of 0.5-1.5 cm at an angle of 45 degrees; a side ingredient preparing step of preparing side ingredients consisting of seasoned bean sprouts, seasoned spinach, cabbage herbs, radish herbs, seasoned sea mustard, cucumbers, and kimchi; a seasoning preparing step of preparing seasoning which mainly includes red pepper paste; a rice preparing step of cooking rice using rice and water; and an adding step of adding the rice produced in the rice preparing step in a container, putting the prepared side ingredients thereon, putting the young hairtail sushi on the top of the side ingredients, and adding the seasoning in the container. By means of the present invention, bibimbap is produced using young hairtail which is easily caught off the coast but is wasted or treated as an ingredient for a processed food. The bibimbap using young hairtail tastes less fishy and is more aromatic and tasteful than using hairtail. In particular, side ingredients such as several sorts of greens mixed with the young hairtail sushi are cooked with minimal salt. Salted young hairtail sauce is added in seasoning so that one who consumes the bibimbap of the present invention can experience the savory taste of the young hairtail sushi, a good texture while chewing the bone, and a strong smell of the salted young hairtail sauce.
