摘要 The present invention relates to crushed garlic containing green tea ingredients which is not discolored but maintains the unique flavor of garlic and the freshness even if being stored for a long time by adding a small amount of green tea powder and citric acid to ordinary crushed garlic and a manufacturing method thereof. The method of manufacturing crushed garlic containing green tea ingredients includes: a raw material preparation step (S) of peeling off garlic cloves which are kept refrigerated; a peeled garlic pasteurization and cleaning step of cleaning the peeled garlic cloves from the raw material preparation step (S) by putting the garlic cloves into bittern water in which 5 wt% of sodium chloride (salt) is put into 100 wt% of 83°C- 86°C hot water for one to two minutes, taking the garlic cloves out from the bittern water, and drying the garlic cloves with 80°C- 90°C hot wind to remove the bittern water on the garlic cloves; a dressed garlic pulverization step (4) of dressing the dried garlic cloves from the pasteurization and cleaning step by removing the stalks of the garlic cloves and crushing the dressed garlic cloves under a low temperature of -2°C - 0°C; a crushed garlic mixing step (5) of adding 2.8 - 6.6 wt% of green tea powder and 0.2 - 0.4 wt% of citric acid into 93 - 97 wt% of the low-temperature crushed garlic from the dressed garlic pulverization step and stirring the mixture for 20 - 30 minutes under a low temperature of -1°C - 1°C; and a vacuum packaging step of packaging the green tea-mixed crushed garlic from the crushed garlic mixing step (5) into a packing container in a vacuum while maintaining the temperature of -1°C.
