<p>The present invention relates to thesynthesis of a glycerol derivative of a hydroxy fatty acid, and more specifically, to a glycerol derivative of a hydroxy fatty acid prepared by synthesizing 7,10-dihydroxy-8(E)-octadecenoic acid (DOD) and glycerol into a hydroxy fatty acid-monoglyceride by using a lipase, and a preparation method therefor. According to the present invention a novel substance having a more improved antibacterial activity using a hydroxy fatty acid having an antibacterial activity would be developed, and as a result, DOD-monoglyceride having a novel form is produced by using DOD as a substrate, thereby increasing the antibacterial activity of DOD and improving the industrial applicability thereof.</p> |
