The present invention provides a water-oil fryer. The water-oil fryer includes: a hopper which has an open top, a first and a second storage space to store fry oil and water separately, and an outlet at the center of the bottom; a heater which is installed inside the first storage space, generates heat using power applied from the outside, and heats the fry oil filled in the first storage space; a cooling passage which is installed in the upper part of the second storage space of the hopper, of which the both ends are connected and installed to a tank at the outside, and which exchanges heat by forcibly circulating the coolant stored in the tank by the pumping of a pump for the water stored in the second storage space not to be heated by the heat of the fry oil; a drain valve which is installed at the outlet of the hopper and opens the outlet selectively to discharge the water stored in the second storage space and sediments falling during the frying to the outside; and a transparent window which is installed at the front of the hopper and enables a user to check the status of the fry oil and water stored in the first and the second storage space of the hopper and the sediments falling into the water outside through the transparent glass placed at the center. |
