PROBLEM TO BE SOLVED: To provide a method of producing solid fat having a specific iodine value.SOLUTION: The method of producing solid fat includes the steps of: (1) mixing a laurin-based fat with a C14-C22 fatty acid and heating and melting a mixture thereof, wherein the amount of the fatty acid is 0.5-15 mass% based on the total mass of the laurin-based fat and the fatty acid; (2) cooling a heat-molten material obtained by the heating and melting to obtain a crystallized material; (3) separating the crystallized material into a solid part and a liquid part by solid-liquid separation; and (4) removing the fatty acid from the solid part to obtain solid fat. |
