The present invention relates to a system and a processing method for fresh-cut products whereby agricultural products are processed so that people can immediately and conveniently eat the fresh products. The present invention provides the fresh-cut products of which stability, texture, flavor, and nutrients can be maintained and preserved; and browning of the fresh-cut products can be prevented. The processing method for fresh-cut products includes the steps of: rating the agricultural products according the size; washing/cutting the rated agricultural products; sterilizing the agricultural products; dehydrating the agricultural products; and vacuum-packing the agricultural products after dehydrating and ripening at low temperatures. |
