The present invention relates to a manufacturing method of a Meretrix iusoria soup, and, more specifically, to a manufacturing method of a Meretrix iusoria soup which comprises: (a) a step of putting 0.5-3 parts by weight of onions, 0.1-1 part by weight of spring onions, 0.01-0.2 parts by weight of kelp and 1-2 parts by weight of radish to 100 parts by weight of water, and heating; (b) a step of taking out the onions, spring onions, kelp and radish of step (a), and adding salt to prepare a base broth; (c) a step of adding 200-400 parts by weight of Meretrix iusoria to 100 parts by weight of water, and heating; (d) a step of adding 1-4 parts by weight of a kalopanax to 100 parts by weight of water, and heating; (e) a step of mixing the result in which the Meretrix iusoria has been removed from step (c), and the result of step (d) to prepare a Meretrix iusoria base broth; and (f) a step of adding 5-10 parts by weight of the Meretrix iusoria base broth of step (e) to 100 parts by weight of the base broth of step (b), and heating to prepare the Meretrix iusoria soup. |
