摘要 <p>The present invention relates to a method for manufacturing ice chicken, which can be stored for a long time by inhibiting the propagation of microorganisms as much as possible and be eaten cold on the spot by customers as well as be eaten warm by heating it up in the oven or microwave according to user′s personal taste since the ice chicken is prepared by selecting the upper and lower wings (including 1/2 half wings) from fresh chicken, salting and aging them, coating with bread crumbs and deep-frying at high temperatures, then coating with a sauce and freeze-drying them. The method comprises: a step for washing the upper and lower wings (including 1/2 half wings) of fresh chicken; a step for salting the washed chicken wings using a tumbler at 4 rpm for 20 minutes, then aging them for 8-12 hours; a step for liquid coating the aged chicken wings with the batter for ice chicken at 10±2°C; a step for breading the liquid coated chicken wings; a step for deep-frying the breaded chicken wings in a deep fryer at 185°C±5°C for 30-40 minutes; a step for coating the deep-fried chicken wings, keeping the temperature at 10±2°C, with the sauce at 4±2°C using a tumbler; a step for freezing the chicken wings coated with the sauce using a sharp freezer at -35±5°C for 40±5 minutes; a step for checking the presence of a metallic foreign body in the frozen chicken wings using a metal detector; a step for packing the chicken with plastic and putting in a paper box unless the metallic foreign body is detected, then packaging with an outer box and storing at -18°C; and a step for transporting them.</p>
