The present invention relates to a processing method of catfish and a cooking method using catfish processed by the same. By the processing method of catfish, catfish, which is cooked by a limited method due to stickiness of the skin and fishy smell unique to freshwater fish, can be cooked in an easy manner. In particular, according to the processing method, the catfish is washed, sliced, and dried by cool air at 10-20°C for 8-16 hours to until a water content of the catfish becomes 30-50% (w/w). |
