PROBLEM TO BE SOLVED: To provide a composition for emulsification which never melts in heating of a cooking production process and can impart a more juicy texture to foods and frozen foods, e.g. hamburgers, in heating of the final cooking stage, an emulsion containing the composition and a food and a frozen food containing the emulsion.SOLUTION: A composition for emulsification contains cyclodextrin and modified konjak mannan. An emulsion containing the composition and a food and a frozen food containing the emulsion are also provided. A composition for emulsification containing cyclodextrin and konjak mannan and added with an alkali, an emulsion containing the composition and a food and a frozen food containing the emulsion are also provided. |
