PROBLEM TO BE SOLVED: To provide a process for producing a tea extract which contains non-polymeric catechins having enhanced solubility in high-concentration organic solvents.SOLUTION: The process for producing a tea extract includes a step in which a crude tea extract having a non-polymeric catechin content of 5-40 mass% in the solid components is mixed with a water-soluble metal salt in an organic solvent aqueous solution having an organic solvent of 70-98 mass%. |
