PROBLEM TO BE SOLVED: To provide concentrate of flavor components of aromatic citrus as a handy seasoning which can be tasted throughout the year without being limited in a harvest period.SOLUTION: Dry powder concentrating flavor components is manufactured by cutting out, freeze-drying, powdering and grinding only epicarp concentrating aromatic components. The aroma and the flavor can be relished by mixing the dry powder with sashimi soy sauce as a handy seasoning and soaking the dry powder with the soy sauce. Besides, citrus vinegar can be taken out and stored by squeezing the fruit which is removed the epicarp, and rich flavor vinegar can be provided by mixing the citrus vinegar with the dry powder. |
