The present invention relates to a rice processed food using fermented brown rice and to a method for manufacturing the same, and more specifically, to a method for manufacturing a rice processed food having excellent flavor and quality by fermenting brown rice having useful biological activity during a manufacturing procedure of the rice processed food; and to a rice processed food manufactured by the method. The rice processed food according to the present invention is manufactured by fermenting brown rice having various functional nutrients, and the rice processed food using fermented brown rice, which is manufactured according to the present invention, can maintain distinctive nutrients of brow rice and increase the degree of elasticity, thereby overcoming drawbacks of the rice processed food.
