PROBLEM TO BE SOLVED: To provide a method for easily producing a polyphenol composition in a state of a solid material excellent in solubility in water.SOLUTION: There is provided a method for producing a polyphenol composition, the method comprising the following steps of (1) and (2): (1) heating a mixture of (A) hardly water-soluble polyphenols and (B) water-soluble polyphenols at a temperature of the lowest melting point or higher than the glass transition temperature of (A) hardly water-soluble polyphenols and (B) water-soluble polyphenols to obtain a heat-treated liquid; and (2) cooling to solidify the resulting heat-treated liquid. |
