摘要 The present invention provides a method for preparing rapidly gelatinized starch comprising the steps of: pulverizing starch to obtain a pulverized material; dissolving the pulverized material in a solvent to obtain a dissolved material; adjusting the pH of the dissolved material to 7-13; and adding a cross-linking agent to the dissolved material of which the pH has been adjusted. A processed rice product is gelatinized within a short period of time by using the method of the present invention, and a processed rice food using the same can be provided.
