PROBLEM TO BE SOLVED: To provide a lactic acid bacterium having improved survivability under the conditions of oxidation stress by improving the resistance to oxidation stress of the microorganism, focusing on the oxidation stress imposed on the lactic acid bacterium during the food production and storage process.SOLUTION: Obtained is a lactic acid bacterium of which resistance to oxidation stress is improved by increasing the transcription of one or more genes selected from dnaK, groEL and groES by treating the lactic acid bacterium with heat or a high concentration of hydrogen peroxide.
