摘要 PROBLEM TO BE SOLVED: To provide a technique for evaluating a risk of onset of a blue discoloration symptom in advance at an any time and stage from sowing, planting, harvesting and distribution, in taking preventive measures before the onset of the blue discoloration symptom of a Japanese radish.SOLUTION: As evaluation of a risk of onset of a blue discoloration symptom of a Japanese radish: an evaluation agent containing an oxidant is added to a slice, ground product or ground liquid of a seed or root of a Japanese radish in which no blue discoloration symptom occurred, or a filtrate thereof; a blue discoloration symptom is thereby made to occur; and a risk of onset of the blue discoloration symptom is evaluated and predicted from the degree of discoloration.
