摘要 Enzyme compositions stabilized with coffee-derived materials are provided. The stabilized enzyme compositions are especially useful in the production of soluble coffee from roast coffee solids. According to the present invention, provide is a method of producing soluble coffee that retains the robust coffee flavor and aroma similar to R&G coffee using enzymes but without conventional formulation ingredients normally used to stabilize such enzyme formations. Moreover, the simplified method of producing soluble coffee reduces costs and unit operations.
