PROBLEM TO BE SOLVED: To provide a method for drying living yeast cells alive maintaining their activity, that is, a method for easily and effectively producing dry yeast having high viability and high activity by drying living yeast cells under the conditions not negatively affecting yeast's viability and activity.SOLUTION: Provided is a simple and time-saving method for obtaining dry yeast maintaining high viability and high activity, in which a pure culture fluid of yeast is centrifuged to collect the cells, then the cells are compressed and granulated by extrusion granulation, then subjected to microwave irradiation, and dried under reduced pressure at 20 - 40°C for 60 - 180 minutes. |
