PROBLEM TO BE SOLVED: To provide a salt composition liquid capable of preventing discoloration of unheated meat due to the reaction of metmyoglobin by a short-time treatment without spoiling the flavor, and a discoloration prevention treatment method.SOLUTION: In clean water, 3 to 7 vol% sodium bicarbonate, 2 to 6 vol% trisodium citrate, 0.05 to 0.12 vol% water-soluble ionized mineral liquid of Ringer's solution which contains metal ions as minerals, 0.5 to 1.2 vol% of salt content, and 0.5 to 1.2 vol% sugar content are dissolved to constitute a salt composition liquid for discoloration prevention treatment. The water-soluble ionized mineral liquid preferably includes two or more types of metal ions selected from calcium, zinc, sodium, magnesium, manganese, iron, and potassium, as minerals. |
