PROBLEM TO BE SOLVED: To provide a method for manufacturing an octopus dumpling, which prevents the octopus filling of the dumpling from being hardened too much.SOLUTION: The method for manufacturing an octopus dumpling includes attaching an octopus pretreatment agent selected from the group consisting of the following (A), (B), (C), and (D) to an octopus filling for use: (A) emulsified fat composition having a high oil content; (B) sol composition which contains 5.0 mass parts or less of pregelatinized starch relative to 100 mass parts of the emulsified fat composition having a high oil content; (C) sol composition which contains 5.0 mass parts or less of polysaccharide thickener relative to 100 mass parts of the emulsified fat composition having a high oil content; and (D) sol composition which contains 5.0 mass parts or less of starch and 1.0 mass part or less of polysaccharide thickener relative to 100 mass parts of the emulsified fat composition having a high oil content. |
