The present invention relates to a strawberry jam composition having a low glycemic index (GI) and a manufacturing method thereof, and more specifically, to removing foreign substances from raw material strawberries then processing by using a crystal fruit sugar which is an alternative sweetener on the flesh of sanitarily washed strawberries, thereby having an outstanding effect of providing a novel strawberry jam composition with a low GI.
