<p>Provided is a processed cheese having a soft and non-soggy mouthfeel, having a favorable sensation upon biting, and having stringiness even after cooling and not just when heated. The processed cheese contains 2.0-18.0 wt% of modified tapioca starch, 2.0-9.0 wt% of pregelatinized starch, and 34-73 wt% of starting material cheese, and so it is possible to provide a processed cheese having a soft and non-soggy mouthfeel, having a favorable sensation upon biting, having stringiness even after cooling when mixed, and not having separation of oil/fat after heating.</p> |
