摘要 <p>PROBLEM TO BE SOLVED: To provide hydroxypropyl methylcellulose having high thermal gelation temperature and high thermal gel strength, and a method for producing the hydroxypropyl methylcellulose.SOLUTION: The hydroxypropyl methylcellulose is characterized in that the average substitution degree of a methoxyl group per a glucose unit is 1.0-2.0, that of a hydroxypropoxyl group is 0.05-0.4 and a value (A/B) is 0.305 or higher, which value is obtained by dividing the substitution degree (A) of the methoxyl group to be substituted directly for the hydroxyl group of the carbon in the 6-position of the glucose unit, in which the hydroxypropoxyl group is not substituted for the hydroxyl group, by the substitution degree (B) of the methoxyl group per the glucose unit.</p>
