摘要 The present invention provides a manufacturing method of lotus leaf liquor comprising the following steps: (a) a step of manufacturing a lotus leaf saccharide immersion extract by pre-processing lotus leaves and leaching into a saccharide extract; and (b) a step of mixing the lotus leaf saccharide immersion extract of step (a), cereal, malt and/or yeast as fermenter and water, and fermenting. The lotus leaf liquor manufactured with the method of the present invention remarkably improves organoleptic evaluations in color, flavor and taste areas compared to the existing lotus-added traditional liquor available on the market.
