The present invention relates to a method for preparing gochujang (red pepper taste) using hot spring water and gochujang prepared by the method, wherein the method comprises the steps of: (a) seeding Aspergillus oryzae on cooked glutinous rice, followed by culturing, drying, and pulverizing, to prepare glutinous rice koji; (b) fermenting a mixture, which is obtained by mixing a fermented soybean powder with the glutinous rice koji prepared in step (a), to prepare a fermented material; and (c) mixing a red pepper powder, salt, and hot spring water in the fermented material prepared in step (b), followed by aging. |
