The present invention relates to fermented coffee using nuruk (Korean rice-wine starter) and a method for preparing the same, and more specifically, to fermented coffee and a method for preparing the same, wherein coffee beans are fermented with nuruk, thereby allowing a unique taste of coffee to be in harmony with a unique delicate flavor of the fermented coffee beans. Further, the present invention relates to fermented coffee and a method for preparing the same, wherein the coffee is prepared by fermenting coffee beans, thereby lowering the caffeine content without losing effective ingredients contained in the coffee, and providing health functionality to the coffee since lactic acid bacteria generated as a result of fermentation of the coffee beans are edible together with the coffee so that the preference of consumers can be improved. |
