The invention relates to the electrolytic treatment of the wastes of olive presses with recovery of the residual olive oil, removal and exploitation of the solids and then liquid oxidation of the de-oiled wastes by electrolytically produced oxidants, deactivation of the oxidants, passing of the treated wastes through active carbon and their final treatment with reverse osmosis and recovery of the sodium chloride, which is recycled and returns to the electrolytic treatment of the de-oiled olive-press wastes.
