FIELD: food industry.SUBSTANCE: invention relates to preservation industry, in particular, to the pickled cucumbers sterilisation method. The method involves three-stage heating of some jars with pickled cucumbers in 60, 80 and 100°C water during 6, 6 and 6 minutes respectively and cooling of other jars in the same baths filled with 60 and 80°C water during 8 and 8 minutes with continuation of cooling in another bath at water temperature equal to 40°C during 8 minutes. During the heat treatment process the jars are turned upside down with a frequency equal to 0.166 s.EFFECT: invention implementation allows to enhance the ready products quality. |
