The present invention relates to a composition for inhibiting histamine production in a mackerel containing an Ecklonia cava extract or a rhubarb extract and a method for manufacturing a mackerel using the same. According to the present invention, the Ecklonia cava extract or the rhubarb extract inhibits the growth of Morganellamorganii and Photobacterium phosphoreum, microorganisms that exist in the mackerel, and at the same time inhibits activation of histidine decarboxylase derived from Morganellamorganii and Photobacterium phosphoreum. Therefore, the composition for inhibiting histamine production in a mackerel containing an Ecklonia cava extract or a rhubarb extract has an excellent effect of inhibiting histamine production in a mackerel. Fish histamine poisoning can be prevented by applying the extract to feed pellets for the mackerel, thereby enabling safe usage of the mackerel.
