The present invention relates to instant rice and to a method for preparing same, and, more particularly, to instance rice and to a preparing method comprising the steps of: soaking rice into the water having a specific temperature; performing a primary steaming process and a second steaming process; diluting the steamed rice with cooling water; drying the rice; hot air roasting the rice in a specific condition; cooling the rice; and selecting and packing the rice. The method may further comprise a step of treating the rice with diluted functional fractions. The instant rice of the present invention may be cooked in a quicker time as compared with instance rice prepared by the method having steps other than those of the method of the present invention, and thus may not only have the same texture and flavor to that of rice cooked by ordinary methods but also can be preserved over a long period of time and allow for easy preservation and distribution. Therefore, the instant rice of the present invention can be used as various types of instant food such as emergency food, food for leisure and sport activities, and food for outdoor activities. |
