PROBLEM TO BE SOLVED: To provide a method for manufacturing a fermented product using a natural fermentation system, and the fermented product.SOLUTION: Raw materials are accommodated in a container to be plugged. After the aperture of the container is plugged, the raw materials packed in the quasi-hermetic container are preserved under controlled conditions at a predetermined low temperature for a predetermined period. In the preservation step, a specific bacterial flora is formed by a natural fermentation system to achieve natural fermentation using indigenous microbes attached to the raw materials and sugar derived from the raw materials. Impurities are then removed from the specific bacterial flora. The method for manufacturing a fermented product including the bacterial flora, having no bacteria to be detected without heating (10000 pieces or less/g), and the fermented product are thus provided. The present invention is to manufacture and provide a fermented product having no bacteria to be detected without heating (10000 pieces or less/g) for use as a base material (kimoto) in production of various foods, using a natural fermentation system. |
