Compositions which form edible gels with water and are of enhanced keeping quality comprise fumaric acid and the water-soluble Irish moss extracts carrageenin and gelose. The compositions may contain locust bean gum, raw starch or pre-cooked starch. A salt such as potassium chloride for enhancing the gelling properties, sucrose or another sweetening agent, a buffer such as sodium citrate, potassium citrate sodium fumarate or sodium acid fumarate, a colouring material and a flavouring material.
