<p>PROBLEM TO BE SOLVED: To provide a fiber-rich gelato composition with a low carbohydrate content and a high protein content, and a manufacturing method thereof.SOLUTION: A fiber-rich gelato composition with a low carbohydrate content and a high protein content, of which taste, body, and texture are similar to those of a conventional gelato, and a manufacturing method thereof are provided. The water-based fiber-rich sorbet or gelato composition with a low carbohydrate content and a high protein content includes 0 to 25 wt% carbohydrate, 5 to 25 wt% protein, 0 to 25 wt% fiber, 0 to 28 wt% polyol, 0 to 1 wt% high sweetness sweetener, 0 to 28 wt% sugar, 0 to 100 wt% fruit, 0 to 30 wt% flavoring, and 0 to 85 wt% water.</p> |
