The present invention relates to a method of producing samgyeonmyeon (warm noodles with chicken and ginseng) which is eaten by pouring broth made of chicken and pattlla bones of pigs to noodles which are mainly made from ginseng and sweet potato starch. The present invention is to provide noodles which include ginseng while removing the bitterness of the ginseng, and comprises: a ginseng powder production step of cleaning and drying the ginseng and making powder; a kneading step of mixing and kneading the sweet potato starch, flour, jujube powder, salt, and water; a noodle forming step of fermenting dough obtained in the kneading step in a refrigerator and forming noodles; a cleaning step of removing blood by precipitating the pattlla bones of pigs in flowing water; a broth production step of boiling the blood-removed pattlla bones of pigs, further boiling after adding fat-removed chicken, garlic, and medicinal herbs, and separating chicken bones and meat; and a completion step of boiling and preparing the separated chicken meat in the broth production step and noodles obtained in the noodle forming step in a bowl, pouring the broth obtained in the broth production step and decorating with garnishes. |
