The present invention relates to a method for producing sausage with unpolished rice and glutinous rice and, more particularly, to a method for producing sausage with unpolished rice and glutinous rice which includes: a step of obtaining a first mixture by mixing and crushing chicken breast, lard, onion and garlic; a step of obtaining a second mixture by mixing and crushing a composite salting agent, refined sugar, frank seasoning, soluble PAP resin, egg white, refined salt, soybean and purified water; a step of mixing the first and second mixtures; a step of aging the mixture prepared at step (c); a step of adding starch into the aged mixture; a step of macerating and boiling unpolished rice and glutinous rice, and mixing the unpolished rice and glutinous rice with the mixture prepared at step (e); a step of forming the mixture prepared at step (f) into a sausage shape; a step of smoking the formed sausage; a step of cooling the smoked sausage; and a step of cutting and packing the cooled sausage. |
