摘要 The present invention relates to a method for sterilizing a soybean fermented food and a soybean fermented food sterilized thereby, wherein the method comprises the steps of: adding ethanol or an aqueous ethanol solution in a content of 2-5 parts by weight in terms of ethanol to 100 parts by weight of a soybean fermented food; and treating the soybean fermented food with a joule heating apparatus to sterilize the soybean fermented food. Therefore, harmful bacteria that may cause food poisoning can be reduced while the total microbial count in the soybean fermented food as a fermented product is rarely changed, and the soybean fermented food can be maintained for a long period of time in a state in which the harmful bacteria are reduced.
