摘要 PURPOSE: A method for manufacturing makkoli(Korean rice wine) using autoreactive ionized calcium is provided to optimize fermentation condition, to prevent breeding of harmful bacteria, and ensure excellent taste, flavor, and nutrient. CONSTITUTION: A method for manufacturing makkoli comprises: a step of preparing ipguk(Japanese koji); a step of preparing crude liquor; and a step of primarily and secondarily mashing and maturing. Water for brewage contains weathered coral and is prepared by pulverizing weathered coral at 350-500 mesh, heating at 800-1250 deg. C for 90-150 minutes and at 70-80 psi, and dissolving in water at 20-30 deg. C. The half width of the water is 35-60 Hz when measuring using NMR(Nuclear Magnetic Resonance).
