<p>PROBLEM TO BE SOLVED: To provide a buckwheat noodle which can be frozen without causing conventional problems in boiling a frozen product such as the occurrence of short cut noodles and the variation in boiling due to partially hardened, unloosened noodles.SOLUTION: The slimy component of taro is extracted to make a taro extraction water, which is blended with buckwheat flour. The mixture is kneaded into a buckwheat noodle, which is frozen for storage.</p> |
