The present invention relates to a method for making knife-cut noodles with acanthopanax, comprising: a first step of preparing an acanthopanax soup by putting acanthopanax roots and acanthopanax fruits in a mixture in which 60 cc of Korean distilled liquor is mixed with 1200 cc of water, followed by boiling at 100°C for 20 minutes; a second step of preparing a gel-phase acanthopanax gel by cooling a mixture in which smashed acanthopanax solid ingredients are mixed with the acanthopanax soup, which is prepared by being boiled in the first step; a third step of preparing a broth by soaking medicinal herbs, which are put in a net, in a 1000 cc of boiling water for 3 hours; a fourth step of preparing a paste by putting a mixture of 2.8 wt% of the acanthopanax gel and 0.2 wt% of refined salt in 27.8 wt% of flour, and 69.2 wt% of spring water in a kneading machine, followed by mixing and kneading; a fifth step of aging the paste in a refrigeration state of 4°C for 2 hours; a sixth step of molding noodle stripes from the paste, which is aged in the fourth step, using a noodle making machine; and a seventh step of putting 18.2 wt% of the noodle stripes molded in the sixth step and 10.0 wt% of garnish in 71.8 wt% of the broth prepared in the third step, thereby making knife-cut noodles. |
